On our most recent trip to Disneyland, we stayed my cousins place along Jamboree Ave. in Irvine. There, we found a great Korean noodle house that served the most hearty spicy noodles soups... perfect to tame our ethnic food cravings after a whole day of burgers, fries and funnel cakes.

We had this Cuban steak and plantain fritters at some downhome cuban diner just off of South Beach (Miami) awhile back. Breakfast then... but dinner earlier this evening.

New York Steak is on sale this week at Safeway $3.99/lb... rubbed with cummin, corriander, garlic, and oregano; char grilled medium rare. The relish is made with minced videlia onions, cilantro, and lemon. The plantains were mashed then pan fried, served with the El Mexicano brand crema (sour cream).

Here in the bayarea, we're fortunate enough to have many Hawaiian BBQ restaurants to choose from... L&L Hawaiian, Ohana, and many others. Among my kid's favorite item on the menu is the Spam Masubi.... yes, Hormel SPAM!

Nowadays, I make our own masubi's in my kitchen, by the platefull, stacked-up like midwest White Castle burgers. Since my hubby and I are planning a few long roadtrip vacations this summer, I am definitely thinking on making these for the road.

Remembering the Lechon (a Traditional Philippine Roast Pig)

Last Sunday, Mike, the kids, and I attended a traditional Filipino First Birthday celebration. The center piece of the buffet table was a whole Lechon- a Filipino style Roast pork. Lechon is typically made from a young pig (around 6-8 months old). It is lightly seasoned with salt and pepper, rubbed with spices  throughout, then slow roasted for several hours over hardwood charcoal.

Lechon is roasted until the skin is crispy golden brown. The meat is mostly succelent and juicy, while a few parts tend to get dry. It is served with the traditional lechon sauce made from ground pork liver, bread crumbs, vinegar, and brown sugar.

If you haven't tried a lechon yet, then better get invited to a Filipino party soon!
